Preheat oven to 180°C.
Cut the puff pastry into 9 even squares (8 x 8 cm) and divide them on 2 baking trays lined with baking paper.
Spread a teaspoon per tart of soft goats cheese onto each square, leaving approximately a 1cm border around the edge.
Top each tart with several sliced strawberries and sprinkle with raw sugar.
Bake in the oven for 15-18 minutes or until the edges are nicely browned.
Mix honey and balsamic vinegar together in a small dish and microwave for 10-20 seconds in the microwave until runny.
Pour a small amount of the glaze over each tart and then serve immediately.
