Choc Chip S’more Cookie Sandwich

This cookie recipe has to be one of the ooziest, most ridiculous and delicious creations I’ve ever made. Eating one of these babies will result in sticky fingers and possible early-onset diabetes, but DAMN they taste good.

I started off with my all time favourite choc chip cookie recipe. These cookies bake fairly flat and are chewy in the middle and crunchy on the outside – the perfect structure for a cookie sandwich in my opinion.

If you wanted to make these extra fancy, then I’d suggest making your own marshmallows. I’m yet to conquer this myself, but have been eyeing off this recipe from The Kitchn. However I was on a time budget, so store-bought worked for me!

I was worried my lack of kitchen blowtorch would hinder the production of these babies (I seriously need to buy one – think how much creme brûlée I could make!) but fortunately the oven grill worked a treat. I literally just laid out half the cookies on a lined baking tray, topped each with a few marshmallows and then toasted them all at once. As soon as they were out, a quick drizzle of dark chocolate, sandwich with the other and voila! Cookie sandwiches for all!

Ingredients

For the cookies

  • 140 g butter room temperature
  • 1 cup brown sugar
  • 2 tbsp caster sugar
  • 1 egg room temperature
  • 1 tsp vanilla extract
  • cups plain flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 250 g chocolate chips
  • Sea salt

To assemble

  • 1 bag of marshmallows
  • 100 g dark chocolate

Instructions

For the cookies

  • Preheat oven to 170°C. Cream the butter and sugars for at least 5 minutes until the mixture becomes light and fluffy.
  • Add the egg and vanilla extract and beat well.
  • Add choc chips, flour, baking soda and baking powder. Beat on low speed until just combined (don't overwork the mixture or it can become tough).
  • Dollop tablespoon sized balls of cookie dough onto lined baking trays. I usually put 5 cookies on each of my 4 trays as these babies spread.
  • Bake until cookies are golden around the edges, around 12-14 minutes.

To assemble

  • Melt the chocolate in a small bowl in the microwave on medium high in 30 second bursts. Once completely melted, set aside.
  • Place half of the cookies on a baking tray, flat-side up. Place several marshmallows on top of each cookie.
  • Use either a kitchen blowtorch to melt the marshmallows, or place the baking tray on the highest rack of your grill and toast until blistered and brown (watch them like a hawk though, they burn easily!)
  • Drizzle the chocolate over the toasted marshmallows, then place the remaining cookies on top and squish into sandwiches. This recipe makes 20 cookies, so 10 cookie sandwiches.
  • Make a mess and enjoy!

    Ooh these look great, I’ve been wanting to make my own marshmallows for awhile now too. This recipe might just be the perfect excuse to do it!
