Sometimes the most delicious things in life are the simplest, and this recipe is testament to that saying! I wanted to make something easy but impressive for a dinner party recently, and came up with this recipe which has only 6 ingredients.
I’ve been going a bit nuts with strawberries lately as they are in season, fresh and oh so cheap. But the beauty of this recipe is that because the strawberries are roasted, you can use up ones that are getting a bit past their prime, or even use frozen strawberries. Which makes it the perfect year-round dessert!
I’ve previously topped tarts and other desserts with fresh strawberries, but roasting them with balsamic and brown sugar gives them the most incredible flavour and soft, fall-apart texture. I kind of want to add roasted balsamic strawberries to.. everything!
And when you pair these tangy roasted berries with irresistibly soft, sweet and rich white chocolate ganache, you know you’re onto a winner!

Ingredients
- 1 store-bought tart shell
- 150 ml thickened cream
- 300 g white chocolate chopped
- 120 g strawberries halved
- 1 tsp brown sugar
- 1 tsp balsamic vinegar
Instructions
- Heat the cream up into the microwave until warm (not boiling) and then add finely chopped chocolate, stirring until melted and combined.
- Place the tart shell on a tray and pour the white chocolate ganache until just full.
- Place the tray in the fridge for the chocolate ganache to set, around an hour.
- Meanwhile, combine strawberries, sugar and balsamic vinegar in a small ovenproof dish.
- Roast the berries for 10 minutes and allow to cool.
- Once the tart has set, pile on the cooled roasted strawberries. Add a final dusting of icing sugar if you desire.
I kept the decorations on this tart simple, with a final drizzle of the balsamic roasting juices and a light dusting of icing sugar. If you wanted to dress it up a bit, you could add edible flowers or shavings of white chocolate.
To be honest, the most difficult part of this recipe is waiting for the ganache to set! But patience is a virtue, and you will soon be rewarded with a delicious tart that your guests will think you’ve spent the entire afternoon slaving over.
If white chocolate is a little too sweet for your tastebuds, you can definitely try this tart with dark chocolate instead. And a scoop of ice cream or lightly whipped cream on top wouldn’t go astray either!

I always thought the Italian idea of adding balsamic vinegar to strawberries was a bit weird until I tried it myself – it’s amazing!

Oh I’ve become obsessed with buying ALL the strawberries while they are so cheap! I have the best plans of freezing them and using them in my baking but my boys are also obsessed with them and they are gone before i have the chance!
