Goats Cheese and Strawberry Tarts

I love combining simple ingredients in unique ways, and this was my first time combining sweet and fruity strawberries with the savoury tang of goats cheese. And I think I’m hooked!

These little tarts are so easy to whip up, taste delicious and take under 30 minutes to make from start to finish. Win win.

My favourite dessert cheat in the kitchen has to be frozen puff pastry. I always have some stashed away in the freezer and it’s often my go-to dessert solution if I need to whip up a dessert quickly. From simple apple galettes (puff pastry topped with sliced apples and raw sugar) to DIY pain au chocolat (make your own chocolate croissants by wrapping puff around squares of dark chocolate), there are so many simple ideas you can make with puff pastry.

I decided to keep these babies fairly simple and let the strong, contrasting flavours shine. A generous smear of goats cheese is topped with several thinly sliced strawberries and a sprinkle of raw sugar. They are then baked in a hot oven until golden and crispy around the edges. They are finally drizzled with a mix of honey and balsamic vinegar to add both flavour and a lovely gloss to the tarts.

Goats Cheese and Strawberry Tarts

Ingredients

  • 1 sheet of store bought puff pastry thawed
  • 120 g soft goats cheese
  • 1 punnet of strawberries sliced thinly
  • 1 tbsp raw sugar
  • 1 tsp honey
  • 1 tsp balsamic vinegar

Instructions

  • Preheat oven to 180°C.
  • Cut the puff pastry into 9 even squares (8 x 8 cm) and divide them on 2 baking trays lined with baking paper.
  • Spread a teaspoon per tart of soft goats cheese onto each square, leaving approximately a 1cm border around the edge.
  • Top each tart with several sliced strawberries and sprinkle with raw sugar.
  • Bake in the oven for 15-18 minutes or until the edges are nicely browned.
  • Mix honey and balsamic vinegar together in a small dish and microwave for 10-20 seconds in the microwave until runny.
  • Pour a small amount of the glaze over each tart and then serve immediately.

I have also made a savoury version of this tart with thinly sliced zucchini instead of strawberries (and omitting the sugar and honey). Basically adding goats cheese to pastry is always going to work out a treat!

    Oh la la! These look utterly delicious. I love goat’s cheese and use it a lot on salads, with quinoa or just on nutty homemade bread but I’ve never thought about pairing it with strawberries – definitely one to add to my list. Thank you for sharing!
