An Iced VoVo is an iconic Australian biscuit consisting of a wheat biscuit topped with pink marshmallow on either side of a strip of raspberry jam and sprinkled with coconut. They are very tasty and very Aussie, which makes it the perfect dessert to prepare for Australia Day!
After pulverising the Iced VoVo biscuits into smithereens, you’re left with a delicious pink-tinged concoction of biscuit, marshmallow, jam and coconut. This is then mixed with softened cream cheese for flavour and moisture and finally covered in coloured white chocolate.
It’s really important you check your food dye before trying to tint the white chocolate pink. Look for an oil-based food dye, as water-based food dyes can split the chocolate. I use these powered dyes from Robert’s Confectionery.
I left some covered in just the plain pink chocolate (because it looked so pretty!) and decorated the other half with desiccated coconut.
Pink on the inside and pink on the outside… the perfect way to celebrate the Iced VoVo biscuit!

Ingredients
- 300 g Iced VoVo biscuits*
- 250 g cream cheese room temperature
- 250 g white chocolate
- Chocolate powder dye^
- Coconut to toss the balls in optional
Instructions
- Blitz the Iced VoVo biscuits in a food processor until they form fine crumbs.
- Put the biscuit crumbs in a mixing bowl along with the softened cream cheese, stir to combine.
- Portion the mixture into even sizes using a small ice cream scoop or a tablespoon, then roll into balls.
- Place the Iced VoVo balls onto a lined baking tray and place in the fridge to set for 15 minutes.
- Meanwhile, melt the white chocolate in the microwave on medium in 30 second bursts until melted.
- Add your pink/red powered dye to the white chocolate and stir until you get an even pale pink colour.
- Dip each ball into the melted chocolate - I find it easiest to have a teaspoon in one hand to spoon chocolate over the top, and a fork to fish it out and allow any excess to drip off.
- Transfer the balls back to the lined baking tray and sprinkle some with coconut if you wish.
- Return to the fridge for another 20 minutes until hard.
- Enjoy!

^ Please try and find powder dye, or an oil-based food dye. Water-based food dyes can ruin the chocolate.
